Making Memories
We had a fun night last evening. We invited some of our grand kids over for a hot dog roast and smores making for a fun time. My husband and son made a fire pit out of cement blocks, later to be replaced by river stones we have on our property. The guys got the fire going. I baked some beans....used Bush's original...two cans and added a couple tbsp. of brown sugar and a bit of molasses, some ketchup and tiny bit of mustard. We roasted the hot dogs on sticks and then went onto the smores.
Then we sat around the fire and made memories. (Photo is from a past vacation in Tionesta)

Chickpea Salad and Rice
Here is my variation on the Chickpea Salad and Rice(or Couscous)
Boil 3 cups of salted water (salt to your taste)
Add 1-1/2 cup of rice. Simmer 20 minutes.
Cool
...
Dice:
1 tomato
1 cuke with skin
1 stalk of celery
1 green, red, or yellow pepper
1 carrot shredded
1/4 cup of parsley
Add:
Drain
1 can chickpea/garbanzo beans
1 can of black beans
Dressing:
4 tbsp. lemon (I used two lemons)
4 tbsp. oil
1/4 tsp. salt
1/8 tsp. pepper
2 cloves of garlic minced
Mix dressing ingredients.
Mix together all ingredients and pour dressing over salad.
You can sprinkle feta cheese over salad. I used gorgonzola.
