Chickpea Salad and Rice

Here is my variation on the Chickpea Salad and Rice(or Couscous)

 


 
 
 
 
 
 
 
 
 
 
 
 
 
 
 
 
Boil 3 cups of salted water (salt to your taste)
Add 1-1/2 cup of rice. Simmer 20 minutes.
Cool
...
Dice:
1 tomato
1 cuke with skin
1 stalk of celery
1 green, red, or yellow pepper
1 carrot shredded
1/4 cup of parsley

Add:
 Drain
1 can chickpea/garbanzo beans
1 can of black beans

Dressing:
4 tbsp. lemon (I used two lemons)
4 tbsp. oil
1/4 tsp. salt
1/8 tsp. pepper
2 cloves of garlic minced
Mix dressing ingredients.

Mix together all ingredients and pour dressing over salad.

You can sprinkle feta cheese over salad. I used gorgonzola.

Barbecued Grilled Chicken
Corn on the Cob
Cole Slaw

We had a delicious supper this evening.
I made barbecue sauce the other day.
I used this recipe:

The substitutions I used: no celery seed, I minced onion tops in place of the
onion powder, I minced a garlic clove in place of the garlic powder. I didn't
use the hickory smoke, and I used red pepper flakes instead of cayenne....just a few
sprinkles.  This recipe makes a nice amount for you to use throughout the week.

The substitutions were: I used Chili Powder instead of cayenne and then just sprinkled some
red pepper flakes.  I did not make as much as this recipe called for.

I didn't use celery seed and I substituted Dijon mustard for dry mustard.

I patted the chicken in the dry rub and my son cooked it on the grill.
The last ten minutes he slathered on the barbecue sauce.

I boiled the corn on the cob.

I made the cole slaw and when everything was ready we place the chicken on Kaiser rolls,
place the cole slaw on top of the chicken and ate as sandwiches.  We buttered the corn.

Mother's Day

color, Bind with yarn or staple together.

Take kids to Target and let them pick out a scrumptious

If weather permits, grill her dinner.  Make hamburgers, baked beans, corn on the cob and strawberries over angel food cake for dessert.

Make mom a nice bowl of popcorn and let her watch any movie she likes.  Let her read a book of her choice and put her feet up. 

Make a spa basket for Mom.  Include a loofah scrubber, some bubble bath or essential oils and natural homemade soaps and face scrubs.  Play some beautiful music, possibly coldplay, classical she likes. Buy some nail polish and manicure sets for her. Please include some magazines you know she will love.

Just use your imagination.  Ask the kids for help.  They are bound to come up with something creative.

Summertime Cookout with Kids

Hot Dogs


Beans

Corn on the Cob

Tomatoes and Oil

Smores

Popsicles

Have a cook out with your child.

If your child loves hot dogs you can make

Hot Dogs and Beans.



Place the beans in a casserole, add chopped onion, 2 tbsp. ketchup, a dash of mustard, 1/4 cup of brown sugar, a tbsp. of molasses. Cover with tin foil and place on hot covered grill for an hour or so. You can either cut up your hot dogs and add them to the beans or grill your hot dogs at last minute.



Buy some corn on the cob. Clean it with the kids…..give each one a paper bag and have them shuck the corn. You can also grill the corn with husks on! Add some seasoning: salt, fresh pepper grind, not too much for kids and wrap in tin foil. (you can also put a little bit of water …say a tsp. or so in the bottom of the tin foil or instead brush with oil. Cook on each side for about 15 minutes (turn over to cook the other side) Taste test and see if they are done. Your kids will have fun wrapping the corn, but do not let them place on grill.

Have kids pick some tomatoes from the garden and you cut them up and have them add a little vinegar and oil, salt and pepper, yum!



Beginning of day, if sunny, make some sun tea. Find a big gallon pickle jug or buy a plastic one from walmart. Fill up with water and add 11 tea bags. Set in the sun early in the morning. Later that afternoon, you will have some great tea for your picnic. Add lemon and ice to your glass and enjoy.



For dessert you can make smores on the grill. Just assemble smores as you usually would: graham cracker, hershey bar square, marshmallow, top with another graham cracker and wrap in heavy duty aluminum foil. Place on grill for 4 to 5 minutes. Be very careful opening so little ones don’t get burned. Buy some popsicles and fudgsicles.



Set up a sprinkler for your kids to run through on hot days! Loads of fun. Just be careful with wet grass.

Have kids play hide and seek.

Kick the ball around or have an impromptu soccer game, or football.

Provide a sand box for the little ones and some dump trucks and cars, sand buckets and shovels.

Pittsburgh Steak Sandwich

Chuck's Pittsburgh Steak Sandwich

1 box of Sandwich steaks (Giant Eagle Brand)
1 Loaf of Italian Bread (sliced thick)
1 red onion (sliced thin)
1 Bag Ore-Ida Extra Krispy Golden Krinkles
1 bag of pre-made cole slaw
Marzetti's Cole Slaw dressing
Frank's Red hot Sauce

Fry french fries then fry steak (45 seconds one side, 15 the other side) Place steak on one slice of Italian bread, pile some french fries on steak, layer with onions, layer on cole slaw you have mixed with cole slaw dressing and sprinkle with some hot sauce, place other slice of bread and take a bite. hmmm, sooo good.

Boneless Skinless Chicken Breasts
Big Flour Tortillas
1 green pepper
1 tomato
1/4 red onion sliced thin
1 can of black olives sliced
Red lettuce
1 bottle of ranch dressing

Cut up chicken into bite size pieces and saute' in olvie oil, dice pepper into small pieces, dice tomato. Warm tortillas in oven or microwave. To assemble open tortilla and put chicken then green pepper, tomato, onion, olives and ranch dressing. You can sprinkle some Frank's Hot sauce on it too. Christmas Tree 2010








Decorating the Tree today




Yep, just getting around to it, although my Dad and Mom decorated the tree on Christmas Eve for my brother and I. I started to do this but, no way, not organized enuff to do that. Will post some pics. I put up lights after having checked them and put up two strands, I plugged them in and a whole section was out:( so, am presently filling in.

This is my last moments of freedom, I have been off for medical reasons since October. will return Jan. 3rd. It's nice to have TIME to do stuff.
