Dinner Menus

Today we had the Taco Casserole. It was very good.

There are so many blogs with recipes and menus. I like the fact that this one has breakfast and lunch as well as dinner.  Takes the "what-should-I-have-for-breakfast?" out of a rushed morning, or a leisurely one.  So, I'll let you know how this goes.

Still Working on our Two Week Menu

I am still working on my menu below:https://www.facebook.com/AMomsLove/posts/10151881887942451 I made the tacos....made my own tortillas, but used white flour and not whole wheat, made my own taco seasoning listed below. Served them with grated cheese, pace salsa and sour cream. It was truly delicous. Nothing like homemade tortillas!  I doubled the recipe for the tortillas and tonight we are going to have tortillas with the black beans and cheese and salsa.

Tacos
1 lb. Of ground beef
1 onion
10 tortillas
1 jar of Pace salsa
1 small container of sour cream
1 pkg. Of grated Mexican Cheese
1 packet of taco seasoning

1 tablespoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon dried oregano
1/2 teaspoon paprika
1 1/2 teaspoons ground cumin
1 teaspoon sea salt
1 teaspoon black pepper
Use 1- 2tbsp.
Saute half the onion, add ground beef and brown, add taco seasoning.
Cook until ground beef is done. Warm tortillas in tin foil in oven for 6 minutes. Assemble tacos with ground beef mixture and add pace, cheese and sour cream on top. You can serve with crockpot beans and a salad.

How to Make Bean Soup
Beans you have cooked (above)
1 onion chopped
2 stalks celery
2 potatoes cut up
2 carrots cut up
3 cups water, add boullion, or use chicken stock
1 tsp. Salt
¼ tsp. pepper

Saute onion and celery, add beans, potatoes, carrots and water, bullion or stock. Add seasonings, you can add some parsley or cilantro if you like.
Let cook for about an hour and serve with Italian bread.

Chicken Thigh Dinner

Breaded Boneless Skinless Chicken Thighs
Mashed Red Potatoes
Green Beans in Butter
Spinach

Breaded Boneless Skinless Chicken Thighs
6 chicken thighs
1-1/2 cups Italian breading
Seasoned salt to taste
1 egg and 1/2 cup milk
2tbsp. oil

Beat eggs and milk together, add some salt and pepper.
Place a piece of waxed paper on counter, spread out bread crumbs, sprinkle with
seasoned salt. Dip chicken pieces in egg and milk and coat with bread crumbs, place in hot skillet, coated with oil. Brown both sides on medium heat and turn down to simmer for 30 to 45 minutes. Check if tender or to 165 degrees.


Mashed Red Potatoes
6 red potatoes
pot of boiling water
salt

Boil cut up potatoes for about 20 minutes till tender.
Drain. Melt some butter over potatoes, add salt and mash.

Green Beans in Butter

1 pkg. of fresh green beans
2tsp. butter

Melt butter in small fry pan. Throw green beans in and saute
until desired crispness...salt and pepper.

Spinach

1 can of spinach
A little butter
some salt

Heat spinach, add butter and salt.

For dessert, serve canned fruit or fresh bananas.

New Years Eve Menu and Recipes

Sweet ‘n Sour Meatballs(recipe below)
tortilla cream cheese and salsa wraps(then slice into pinwheels)
potato chips
black diamond white cheddar cheese
pecorino cheese
pumpernickle bread
breton crackers
kielbassa from the strip

salad with cukes lettuce tomatoes and homemade french…
(oil, vinegar, sugar, honey, paprika, salt, pepper)

gingerale, coke and sparkling grape juice

Sweet ‘n Sour Meatballs

2 lbs. Ground beef
½ cup of bread crumbs
1 tsp. Salt ¼ tsp. Pepper
1 medium onion chopped
2 eggs
Combine all ingredients in a mixing bowl. Shape into 1-1/2 inch balls.
Brown meatballs in oil and drain fat.

Sauce for Meatballs

4 tbsp. Of brown sugar
3 tbsp. Of cornstarch
1 cup of water
2 cans of pineapple chunks (reserve syrup)
1 cup of syrup… from cans of pineapple
6 tbsp. Of apple cider vinegar
4 tbsp. Of soy sauce
4 green peppers cut into 1 inch pieces

In large skillet add sugar, and cornstarch tobrowned meatballs. Stir in water, syrup, vinegarand soy sauce. Heat mixture until boils andthickens, stirring constantly. Add pineapple,green pepper. Simmer covered, 15 to 20 minutes

What We Had for Supper


Beef Stew

1 lb. of stewing beef (good quality)
1 pkg. of baby carrots (about a pound)
4 potatoes
1 onion
1 tbsp. oil
2tbsp. flour
salt and pepper to taste

Slice onions in big chunks, brown in oil.
Add beef and brown.
Throw in baby carrots and potatoes you have
cut into chunks...you may not even have to
peel (I didn't)
Sprinkle a couple of tbsp. flour over stew.
Add a cup of water and stir.
Cover tightly and simmer about an hour.
